Ingredients:
- 4 cups of white flour
- 2 cups of thick whipping cream
- 2 cups of white sugar
- 2 eggs (beaten)
- 2 sticks of butter
- 1 teaspoon of baking soda (slightly rounded)
- 1 teaspoon of vanilla
- 1 teaspoon of lemon juice

Icing:
- another 2 sticks of butter
- another teaspoon of vanilla
- 1 cup of powdered / confectioners' sugar
- 12 oz of white chocolate
- some food coloring & decorations

Put 1 teaspoon of lemon juice into the whipping cream and shake well, then let it sit out at room temperature for 24 hours. Place the whipping cream back into the fridge for 2 or 3 days. It might start to curdle or sour, that is okay.

Let your butter sit out for a few hours to soften. Beat 2 eggs, then in a separate bowl, mix together the butter and sugar. Try and get the lumps out. Add the eggs, cream, and vanilla, continue mixing while trying to remove more lumps. Stir in the baking soda, and flour about 1 cup at a time until it's all blended together. Wrap it and let sit in the fridge overnight.

The dough will be sticky so generously add extra flour to the dough, the cutting board, your roller, and your cutters. It is easier to work with while cold, so use a little bit at a time while keeping the rest in the fridge. Roll it out to about one quarter of an inch, cut with cookie cutters, and use something flat to scoop them up with. Bake on parchment paper at 350 for about 10-15 minutes until the edges are slightly brown. Move to a cooling rack.

For the icing, let the butter sit out for a few hours again. Melt your white chocolate in a double boiler and then let it cool to room temperature. Beat the butter until creamy, then add the chocolate to the butter. Continue mixing while adding the sugar and vanilla until it's light and fluffy. Separate into individual bowls for food coloring.

NOTES: Let the white chocolate completely cool before mixing, otherwise it will melt the butter and the icing will be too runny. The icing will harden if refrigerated. Enjoy!
