Cucumber Sandwiches from Hilda
(makes 3 sandwiches)
Ingredients:
1 1/2 cups English cucumber, thinly sliced
1/2 tsp. salt
1/4 cup sweet onion, minced
1/2 tsp celery seed
1/4 tsp. garlic salt
1/2 tsp. pepper
2 tbsp mayo
1 Tbsp fresh dill, minced
2 tsp. apple cider vinegar
2-3 Tbsp. cream cheese (to personal taste)
6 slices of bread
Thinly slice the cucumber with a mandolin or knife and toss the slices with salt in a medium-sized bowl. Add the minced onion, celery seed, garlic salt, pepper, mayo, dill, apple cider vinegar and stir until combined. Put the cucumber mixture into the fridge and chill for at least 30 minutes. Remove from the fridge and drain the liquid. Assemble the sandwiches by smearing cream cheese on both pieces of bread forming a barrier to prevent soggy sandwiches and then adding the cucumber mixture. Serve immediately with peppermint tea for a true Hilda meal.
