As complicated and fascinating as the original maingame boss battle against Bundt was, they really amplified the difficulty in the rematch here. The first thing you'll observe is how much beefier the boss is, boasting 3,900 HP while resisting all elements but Jump, which it is still weak to, which makes it really hard to take down. The real danger however lies in the Torte chefs. Just as resilient to damage as last time, them lighting five candles on the boss will cause it to start using its unblockable 9,999 damage attack on the party... repeatedly. As our physical attacks deal single-digit at this stage, we definitely don't want to engage the Tortes in a race to snuff those lights before the next unblockable wipes out the active party.
A solution does exist. Putting the chefs to sleep with a Sleep Bomb never falters, as is the convenient take on debuffs in this title, and ensures no more candles get lit. You can renew the status while they're asleep, too. Not doing so in a timely fashion causes the final two candles to be lit and the Celebration Shot unblockable to follow immediately afterwards. It's a worthwhile sacrifice if we don't want to lose momentum.
As the chefs are sleeping, Bundt puts up one hell of a resistance. It will attempt to inflict negative status debuffs on our party members and attack physically at range, which isn't effortless to block, but the real threat is its magical arsenal. Boasting multiple sources of magical damage, Bundt acts twice per turn, which may well result in offensive magic being used twice - when the overkill MT ones are used, not even Bowser is safe. Red Essence can be used on Mario to keep the Jump damage going without interruptions from him dying, and using one on Peach can be considered as well. After we run out of Rock Candies, Fright Bombs are a poor alternative as a source of damage output, so Jump will end up doing much of the work.
With proper execution, it's not all that bad, I suppose.
