Update two of Parasite Eve. I first played this one in High School, and I have to say it's one of the great classics of the Playstation era. More creepy and intellectual than Resident Evil, with a great atmosphere of dread as things quickly go to hell around the player.
Add in an awesome battle system, real-world weapons, and a kickass soundtrack composed by Yoko Shimomura, and you've got yourself one hell of an awesome game.
