I was really excited to cook lamb. I ended up driving to a butcher shop on the way to a cider mill the other day so it was a perfect fit! although lamb is expensive. it's a difficult meat to mess up. as long as you cook it slow or sear the cuts of meat. Think of any way us Americans use beef, we can also use lamb/goat.

today we're making Gyros as a simple lamb dish. starting by dry rubbing our Lamb with our simple seasonings of



1 Tbsp of black pepper
3 Tbsp of fresh rosemary
3 Tbsp of fresh thyme
1 Tbsp of salt
Extra virgin olive oil

(Our Lamb was 3.5 pounds. cut the seasonings down depending on the amount of meat being cooked)

Slowly cooking it with a lid on at 300 degrees for 20 minutes. Then come back and cut the meat from the bone. the meat will be rare to medium rare depending on the portion. Cut these into piles. save some for a different dish. or slice it all thinly for your gyros.

Place the prepared meat back into the same pan, put a nice sprig of rosemary and thyme on top and put the lid back on for another 20 minutes or until the meat if fully cooked.

now that the meat is cooked. The meaty juices at the bottom will need to be slowly reduced, to incorporate into the meat. I set my oven to 275 for another 30 minutes. This time without the lid. checking on it every 10 minutes to stir the meat around. Cook until tender, or the liquid has dried.
