Ingredients:

1/4 cup unsalted butter
1 medium onion, diced
1 medium shallot, diced
1 rib celery, diced
1 medium carrot, peeled and shredded
1/2 head green cabbage, sliced thin
1/2 head purple cabbage, sliced thin
2 quart (8 cups) vegetable broth
1 bay leaf
4 re potatoes, peeled and cubed
2 plum tomatoes, seeded and chopped
1 TBS fresh parsley, measured then chopped
salt and pepper
