In Flight Simulator 2020 you can adjust your controller settings for each aircraft, setting Sensitivity and Dead Zone. Sensitivity adjusts how fast the control moves the aircraft surfaces and Dead Zone prevents your controller from responding to minor bumps of the stick.

What's really exciting is that you don't have to exit your flight to change and save your adjustments. Plus you can make as many controller profiles as you want for different aircraft or for specific situations where you want faster or slower controls.
