Leisure Gamer "Asian Meatloaf"
Serves: 4
Ingredients:
1 lb Ground Pork
2 Eggs
1 cup Panko breadcrumbs
6 Green Onions (usually one bunch)
8 cloves Garlic (2 tsp garlic powder)
2 tsp Ginger, minced
1 tsp Toasted Sesame Oil
1 tbsp Rice Vinegar
1 tbsp Soy Sauce
½ tsp Salt
½ tsp Red pepper flakes
Sauce:
2 cup Chicken Stock
2 tbsp Soy sauce
2 tbsp Sugar
1 tsp Ginger, minced (1/8 tsp ginger powder)
1 tbsp Lime juice
2 tbsp Corn starch
1/4 tsp Red pepper flakes
Garnish:
1 bunch Cilantro, chopped
Rice:
Standard measurement = 1 cup rice to 1 ½ - 1 ¾ cups water
1) Line a baking sheet -- could use heat resistant plate as well -- with aluminum foil. Pre-heat oven to 350 degrees.
2) Cut up the green onions, garlic and ginger (reserve some ginger for the sauce). Also, cut up cilantro to use as a garnish when serving. (CHECKPOINT)
3) In a large bowl combine: ground pork, breadcrumbs, eggs, green onions, garlic, ginger, rice vinegar, soy sauce, toasted sesame oil, salt and red pepper flakes. (CHECKPOINT)
4) Mix until all ingredients are evenly incorporated. Place on lined baking sheet and press into loaf form.
5) Bake at 350 degrees for 45 minutes turning once if need be. Pork will turn golden brown and have an internal temperature of 155 degrees.
6) Start cooking rice either with a rice cooker or medium pot. (Standardized measurement is listed in ingredients).
7) In a medium pot combine: chicken stock, soy sauce, sugar, ginger, lime juice, corn starch and red pepper flakes. Bring to temperature over medium high heat, stirring often. Once the sauce has an even consistency -- remove from heat.
8) Let the pork rest after baking for a few minutes, then slice it into ½ inch thick pieces. Serve over rice and top with sauce. Garnish with chopped cilantro.
