Update: 2019 April 6, YouTube app broke again and showing the same message as before. Update: A good news! I find out how to bypass that message and I created a new video, watch here: https://www.youtube.com/watch?v=MsaEVNJC6ww&t=30s
Update April 27: Thanks to “lukas35 jakob” for the provided information you can now make YouTube app completely working on iOS 6 and here what you need to do: (you can use my video tutorial to have understanding but use this new updated information)
First of all download the last YouTube Version compatible for iOS 6.
In iFile find the YouTube folder and inside the folder the "Info.plist". Launch it with File-Editor.
Change the first string CFBundleGetInfoString to 12.11.11546 and the two others CFBundleShortVersionString and CFBundleVersion to 11.11.11546. Save and now everything should be fine for now :-)
