Mario Kart: Double Dash!! on the GameCube was a unique entry in the franchise with its core mechanic being two characters in one car. The characters are divided into pairs, with each pair having access to their own unique special item (ex. Mario & Luigi get a fireball, Yoshi & Birdo get eggs, etc). It is always better to mix characters between the pairings for access to more items. 150cc and Mirror mode are the only ones with a sense of speed, though, as the lack of particle effects and detailed animations can sometimes make it feel like a casual ride in a carriage rather than a race car. The game also hosts controls and abilities locked to 2-player co-op, such as an even better start boost, an attack drift that steals items from others, and an even better drift boost, all of which are not accessible with one player. For this video, I go to 150cc Mushroom Cup with my favorite character pairing - Luigi & Yoshi in the Green Fire car.
