Need for Speed games on PS2 has a lot post processing makes it hard to emulate, even PCSX2 still have active bugs on this game.
This is the setting i could find while maintaining both speed and visual, though the game itself has visual bugs like excessive motion blur and broken lighting or weird pink filter when nearby airport.

NOTE !
- Keep SoC temperature as cool as possible to avoid thermal throttling causing massive slowdown!
- Expect better performance playing the game without recording
