Quick Summary:

Here is what I find with the default sliders:

-Sluggish skating speed: By default players take about 15+ seconds to complete a lap around the ice without a puck, while in real life the average NHLer is easily in the mid 14's while the best are high 13's.
-Slow Shots: Even with 99 shooting, and strength the Slapshot can only reach 91-92 mph standing still, this doesn't make sense as Chara could do about 100+ mph.
-No player skill differential: The 4th liners can score with the 2nd liners, players that have little checking can still layout guys too often.

What my sliders change:

-Faster game speed, players now take from high 13's to mid 14's to skate around the ice. (Depending on the player.)
-Boosted shot power all around to match more realistic numbers. (About 95-96 mph standing still with the best shooter possible.)
-More player differential, now checkers won't score, but they can still be game changers. All lines have their uses and you need to understand what your player's roles are to do well. (If you have a tough guy you don't want to try to dangle through people.)
-Decreased shot accuracy (Shots were too accurate before, but too slow, now most players won't snipe it top shelf all the time.)

What does this do for the gameplay:

-Makes you play D! (Mistakes will be costly.)
-Easier to score in good areas. (Shot slots are 1 in 3 with an average player, just like real life! The game by default is about a 1 in 6+ goal.)
-Harder to reach good areas with time. (While goals are easier in these areas, it's much harder to get to them.)
-Makes you play a certain role based on the player. (If you play the same way with every player, you will not do that well. Checkers should check, playmakers should focus on passing, etc.)
-The faster and more strategic gameplay makes the game more on edge.
