The Best Pumpkin Pancakes Recipe - Baby friendly Breakfast Ideas for Fall
I'll show you how to make the best Pumpkin Pancakes in this recipe. It is baby friendly and toddler friendly making it a wonderful breakfast idea for Fall, or anytime of year because they are simply that delicious! You can easily make this recipe vegan by swapping non-dairy alternative and they are easy to make ahead by popping in the freezer. These Pumpkin Pancakes are a fun one to make the kids for Halloween or Thanksgiving morning. This is how to make the best pumpkin pancakes recipe for kids.
INGREDIENTS:
7 oz. Pumpkin puree (about 1/2 can)
1 cup Milk (I used Ripple, Unsweeted Original Pea Milk, non-dairy)
2 speckled Bananas
180 grams unbleached All-Purpose Flour (about 1-1/2 cups)
3 tbsp Butter (I used Earth Balance Soy Free Buttery Spread) Melted
3-1/2 tsp Baking Powder
1 tsp Cinnamon
1/4 tsp Ground Ginger
1/8 tsp Ground Clove
2 tbsp Brown Sugar
OPTIONAL TOPPING:
1/4 cup Pepitas
1 tbsp Brown Sugar
1 tbsp Butter, softened
PUMPKIN PANCAKE RECIPE:
1) Add all dry ingredients to a large bowl.
2) Mash banana in a separate bowl with a fork till creamy, set aside.
3) Add wet ingredients to dry ingredients, mix till almost combined.
4) Add mashed banana, mix till combined.
5) Preheat griddle to 300 degrees F, grease and pour 1/4 cup batter onto hot griddle. When bubbles form on top, flip and cook 2-3 minutes longer.
6) Meanwhile, prepare topping in a small bowl.
7) Spread topping over pancakes and top with syrup. For young kids, I recommend skipping the topping and syrup and serving alongside yogurt and fruit. My son also loves applesauce for dunking these pancakes.
8) To freeze, put parchment between layers of cooled pancakes. Reheat in oven for 5 minutes at 350 degrees F or on toaster oven, toast cycle (once).
