I used two, but only one energy pistol is enough to kill the yeti. It just takes longer since the energy pistol takes a while to recharge manually. With two you can do it a lot faster. Obviously other weapons can also do the job, maybe even quicker. I just simply chose to use the energy pistol for it does not require any ammo to fire.
