This encounter is really annoying on unfair, but I actually found a way to cheat the little bastard. It turns out he can throw potions through this wall, which also means the AI thinks it can attack where it is. By blocking the doorway with an enlarged character, the second mimic gets stuck on the wall and couldn't do anything - which meant once I put the alchemist to sleep all I had to do was burn down that first mimic before it could kill anyone.

Took a couple of attempts but this worked perfectly.
