I just discovered that the GOG editions of some games (Unreal Tournament and BG&E confirmed for now) have additional tweaks to make the process affinity set itself to one core. For ordinary gaming, it's a-ok and doesn't have any ill effects, but if you try to capture video of it using more modern software (DXTory, MSI Afterburner with Nvenc), they will influence the RPC Call Timer, which was used in games for a long time to sync framerates to realtime movement, causing massive tearing and jaggy movement. Interestingly, Fraps seems unaffected. Setting the affinity back to all cores fixes this issue and lets me capture silky-smooth movement in all games, with Unreal Tournament keeping a steady 120fps capture.

To test this out, I decided to re-capture the introductory sequence of Beyond Good & Evil that I recently started lets-playing for my Polish friends. I am very happy to see no tearing and movement so smooth it's almost a pleasure. The game is hard-coded to work in 60fps and below.

One more thing to learn 'bout 'puters I guess.
