Humanely killing a Blue Runner (locally: Carangas) via the ikejime method after catching it on Berkeley Gulp! bait.
I have the ikejime spike and wire for the spinal cord destruction but the fish was too small to use the wire.

Ikejime is a humane way to kill a fish and all the steps involved make for a premium, high-quality tasting fish with strong umami. Have you been eating bad-tasting fish all your life?

Location: Shipwreck off King's Wharf, San Fernando, Trinidad.


PROPER IKEJIME METHOD AND PREPARATION:
1. Brain spike (fish fins flare, body goes limp)
2. Cut artery under gill flaps. Cut gills.
3. Cut tail through spine to assist in bleeding.
4. From either the head or tail, use ikejime wire to destroy spinal cord to prevent body from autonomously thrashing around. Thrashing increases lactic acid in the flesh souring the fish.
5. Shake fish in clean water to dispel blood.
6. Immediately put in ice slurry (1 part ice, 2 parts water).

7. Gut and clean when home.
8. Leave refrigerated for 2 weeks to increase umami flavour for Japanese high-quality, best-tasting fish.
9. Eat.
