To escape the onslaught on Vah Ruta (and take Sidon with you), you first must set up the moonjump glitch, as I do in the beginning of the video. Once moonjump is set up, you want to do one of two things. Option 1 is to warp somewhere in the area of Zora's Domain, such as the Dagah Keek Shrine or the Ne'ez Yohma Shrine (or, if you use the travel medallion instead, you want to make sure it is not too close to East Reservoir Lake). Option 2 is what I did in the video; I had a save in the area near Zora's Domain and I just reloaded that.

If you follow what I did here, you shouldn't have a problem. Jump in the air to get to Sidon, and initiate talking to him while Link is still in the air. As soon as you gain control of Link again, dismount Sidon, expend all your stamina in the water. Link should respawn wherever you last warped/loaded your save. From there you just need to jump into the water and wait for Sidon to pop up.

After this you can take him pretty much anywhere in Hyrule. You can easily "summon" him by going into a body of water large enough to swim in. Hot springs do not count. You can restore the ability to save, warp and so on by playing a minigame, but I must caution you against saving manually. After escaping and going far enough from Vah Ruta and East Reservoir Lake, the battle will be messed up and you will not be able to enter the Divine Beast by normal means. The only solution would be to wrong warp into the Divine Beast, but the quest cannot be completed afterward, I'm told, because talking to King Dorephan crashes the game.

Reloading a save, entering a shrine or the Trial of the Sword, or warping will cause the music to stop. Pretty much any loading screen, including playing minigames will make Sidon disappear and he can't be summoned by going into random pools of water. You can easily just pick him up again by returning to East Reservoir Lake, however, and until you warp, reload, etc. you'll be able to "summon" him as before.

I did not discover the moonjump glitch or how to escape the onslaught on Vah Ruta with Sidon in tow. I just like to mess around with the exploits that other players find.

Breath of the Wild belongs to Nintendo, of course.
