The Vic Tokai-developed Burnin' Rubber, originally released for the NES under the names Buggy Popper and Bump 'n' Jump, is actually a follow-up to the Data East arcade game of the same name. Drive fast, leap obstacles, smash cars... sounds like a good time to me.
