The video seems to suggest the Cadbury flake is somehow not real chocolate or something because it doesn't melt like normally you'd expect chocolate to melt. The video clip he plays shows the chocolate "survives 30 seconds in the microwave without melting or going soft." This seems to suggest, from Carl Vernon, that the Cadbury Flake is not real chocolate or somehow disgusting.
Chocolate can be made in many many ways and tempering chocolate is a technique used to change the properties of chocolate for certain applications as well.
Good chocolate has cocoa mass & cocoa butter in it. Which the Flake does. I show the list of ingredients in the Cadbury Flake as well & show a video from @HowToCookThat where she's debunking Blossom's video about processed cheese burning vs real cheese melting. It's likely a very similar thing here for why the Flake behaves the way it does.
0:46 I say I will show you it's not impossible to melt. Well, it didn't melt for me either, but it does melt in your mouth & on my hands. My chocolate did go soft after 30 seconds in the microwave though.
"ammonium salts of phosphorylated glycerides" is an emulsifier, commonly used in chocolate as an alternative to lecithin.
