The hot sand maintains a stable temperature, which is difficult to achieve with a direct flame. A stable temperature is essential to prevent the coffee from boiling over too quickly. Foam Development This technique also allows the coffee to develop a thick foam on top. so it looks like there is more there again guys. instead of appearing inside the sand.
