Chess: Double Fork Destruction and Dancing Checkmate

First game was great: 2 rook/king forks and I trapped his queen into an advantageous trade.

But in the second game, I danced around checkmate for a while. At no point did I see a better opportunity to trap his king/checkmate him earlier. Any suggestions? Or did I do everything as best as could be done? I think the rook/bishop trade (my rook) was bad. It was a mistake, but it did keep his king locked up. Not too sure.

When I did that trade, the other option was to put him in check again with my queen. The problem with that is I didn't see an end game for that. If I moved my queen, and then gave him a move where he wasn't in check, he could have taken my rook or bishop for free. And I didn't see a way to keep him in check or checkmate, so I knew I'd eventually lose on of the pieces left vulnerable (bishop by bishop and rook by queen). So I decided to just trade instead of potentially losing.

One more option would have been to trade queens.

And then on move 21, I did b5. My plan was to move Qc5 after that to completely trap him and go for mate. But he got his king out of that box, which was his best move. So I should have probably just done Qc5 first and then b5, so his king would be stuck on b7. Then bring the a pawn into it and checkmate via Queen. That was my best set of moves probably.
