π Cooking with Mary | Homemade Broccoli Soup

βοΈ 1 tablespoon butter
βοΈ 4 small onions, chopped (or around 3 tablespoons onion powder)
βοΈ 2 cups chicken broth
βοΈ 1/4 cup flour
βοΈ 16 ounces frozen chopped broccoli
βοΈ 1 cup heavy cream
βοΈ salt and pepper to taste
1) Melt butter in a large pot over medium heat.
2) Add the onion, stir and sautΓ© for 2 minutes. *If using onion powder, you can add the onion powder and butter to the frozen broccoli and omit this step*
3) In a bowl, mix the broth and flour.
4) Add the frozen broccoli to the onions and stir in the broth and flour mixture. *If using onion powder, add it to the broccoli, along with the butter, then add the broth and flour mixture*
5) Simmer over medium/high heat until the soup thickens, then add the cream.
6) Season with salt and pepper to taste.
7) Optional step: Puree with a blender.
I don't currently own a blender but prefer this soup pureed. I also don't like onions but do like onion powder so substituted the onion powder in place of the raw onion. When I make this again, I would use around 2 tablespoons of onion powder as the onion flavor was a little strong for me.
