This required a bit more thinking in regards to my gear setup. Running the Bone Trophy cuts Saito's health in half in exchange for +35% phys damage inflicted/-35% damage taken, so I wore the Plate of Whale to offset some of that penalty. I also ran the Vita Crown to boost his HP regen into the stratosphere. Warlock Regeneration and Hunter Unguent actually stack.

With all buffs running, Saito basically regens nearly all of his health in one turn, which means he'd basically have to be one-shot in order to lose at that point. I went into the boss fight with Saito in really bad shape, but he still had the tools to completely turn it around.

Ironically this was even faster than my normal run clear. Countering with DoT passives is a powerful tactic.
