Capra Demon is cheap but not really hard. Try to lead the dogs up the stairs and kill them, then continue to lead him up the stairs. If he wedge yourself on that little corner lip, he'll almost always fall and you can do a plunging attack on him for major damage. If you don't have the patience to keep repeating that, you should be able to doge roll around him and maybe even block most of his attacks except for that wicked downward slam he does. He usually staggers too if you get a few consecutive hits on him.

Gaping Dragon is a way more intimidating boss than he is difficult. Basically the fight is an endurance test. If you're a melee character, get as far from him as possible and stay there til he gets down in his crawling stance. Wait for him to shake his head and start running around him. Stay away from his legs while he's still running and position yourself behind his back legs and tail. Two hand your weapon for more damage and get like 3 maybe 4 hits (depending on how fast your weapon is), before running away again. Keep it up you shouldn't have to worry about his tail attack, jump attack, acid spewing, etc. Gets kind of boring but just take your time with him. Also, if I remember correctly, he's weak to lightning, so gold pine resin if you want to get more damage.
