Fun Fact: "Desu" is essentially the polite equivalent of what Jotaro uses (daze). Kakyoin has a very formal way of speaking.

That's why Jonathan says "yare yare da" while Joseph, Jotaro and Jolyne say "yare yare daze" (/dawa; the feminine version of daze). Because they're all gruff delinquents, whereas Jonathan is a proper gentleman.
