🔴Dish & Downtime - Slight schedule change...and dinner!!!
0So last night I made a different version of meatloaf cupcakes and they were AMAZING!!! So of course I need to share with ya'll! Also I'm streaming tonight instead of tomorrow so that Techy daughter and I can watching the kissing booth 3 tomorrow night when she gets back from her dads. I did a little work on the Spooky isle today and also had some deep thoughts about my Christmas island. I'll share those with you tonight!
But FIRST...the recipe
1.25 lbs 93/7 ground beef (so you don't have to drain it)
1 egg
3/4 c panko or plain bread crumbs
Mix it all up, then in a separate bowl mix together
3/4 c BBQ sauce
1/4 c salsa
2 tsp worstdishier (seriously who knows how to spell this) sauce
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 smoked paprika
Add half of the sauce mix to the meat mix. Then add 1 cup of shredded triple cheddar or sharp cheddar cheese and either strips of bacon cut up or 1/3 c bacon bits and mix reallt well
Preheat oven to 450 and spray a 12 c muffin tin with butter or olive oil spray.
Fill each hole to almost the top with the meat mixture then use remaining half of BBQ mix on top of each muffin (mine made more than 12 so I used a mini pie tin that I had)
Bake for 20 minutes. I made up a little more of the BBQ sauce mix and topped it off after baking as well. Muffins should reamove easily from tin.
ENJOY!!!! (you can add shredded veggies instead of salsa if you like too)
