For the first secret island, you want to grapple at the very lowest point you can still reach the arch from and jump immediately as your grapple beam deactivates. Then, after jumping again, wait until you reach the apex before using the hover dash.

For the second secret island, you need to get to the smaller island NW of it, first. There are a few ways to do so, but the grapple beam makes it pretty easy, even though I missed the first attempt.

Once on the smaller island, grapple the pillar to gain speed then quickly grapple the corner of the building so that you bump it as you go past to get 3 jumps instead of only 2. Again, jump just as your grapple beam deactivates and only use the hover dash at the apex of your final jump. Grappling the pillar isn't really necessary, but makes the jump a bit easier.
