According to Nexon Final Fantasy XI Mobile is still happening and has been renamed from Mobile to R2 (R Squared). There hasn't been much news regarding the follow to 2002's Final Fantasy 11 which released on the PS2, PC, and Xbox 360. But this news shows that development is still proceeding. Yoshi-P has given updates on this in the past and fans have been wondering and waiting for more news. With games like Fortnite and Diablo Immortal as reference points perhaps this means Final Fantasy XI Remastered is happening after all and will be more than just a mobile game.
