Here's a video of me turning in my last available Hunt in Chapter 8, before moving on to Chapter 9. You'll also see a list of the completed Quests, which is nearly all of them available. All available Hunts, Rescues, Breakdowns, Dungeons, Cid's weapon upgrades, Photo Ops, Tours, Dishes, and Sidequests completed.

The only caveat to the above are the following:
1) Skills - Everyone is at 10, except Gladiolus. I could just run around with him overnight until he hit 10, but he's going to hit it anyway.
2) Photo Op: Quarry - I'm told this is bugged, and I both walked and drove through the trigger zone multiple times without it activating.
3) Fishing (Navyth's final quest) - This is recommended to attempt with a rod from Altissa, which is Chapter 9. I didn't bother doing it here anyway, because trying to reel in a monster fish with an inferior reel is no fun, so I figured this was definitely something worthy to come back for.
4) Tour: Fishing - There's a Tour near Vesperpool that requires you to fish up a legendary fish. See #3.
5) Fishing - in the video, you will see I acquired nearly every available Dish for Ignis to cook. I did not go through and acquire every available Fish there is to fish up, again because I'd rather do this when I will not be struggling with inferior gear.
6) Dishes - The only missing dishes here that were available were ones that required me to fish something up that I hadn't already. I explain why in #5. Apart from that, the trigger for Papa Bird and Baby Bowl wouldn't activate for me either after multiple attempts, so I moved on.
7) Chocobo Races - you won't see this in my list of completed quests. Mostly because I forgot about them entirely. My chocobo was already Level 10, so I could probably have done them all with relative ease, but it wasn't even on my radar! Oh well.
