Even more testing! This time, however, I'm actually using a recording/display software called AmaRecTV to provide proper deinterlacing. Still recording with OBS, though. It's still a bit useful for my needs.
For this, I decided to use a demo of Futari no Fantavision off of some Japanese PS2 demo disc to test out how effective it is. The answer? More effective than I was expecting for sure. Sorry if it's a bit dark, though, didn't think about messing with how my capture card handles colors.

That does give me some ideas on how to carry on with VHS recording sometime in the future... least if I'm not lazy enough to not hook it back up again.
