UPDATE: after some work on diagnostics, I managed to get better performance out of a Single SLI Bridge with the GTX 1080. It took multiple mods and resets as well as two driver re installations. FPS were at 100FPS at max settings with 8XMSSAA

If you want to get the best out of two GTX 1080 cards from NVIDIA, be patient and wait for driver updates. Most games are not ready for the SLI configuration yet at maximum performance, like DOOM for example. Either way the card is a monster and will beat anything else in the market as drivers increase in performance.
