First Caravans make their money by buying low at one town
and selling high at another town, also they sell to lords.
After fending off an attack, they will sell gear and
prisoners too.

Now in terms of caravans either giving you income, breaking
even and requiring you to pay them, here are the numbers:

When caravans capital (or money on hand) goes below 5000,
you pay the difference so the caravan can go back to 5000.
So if the caravan has 4200, you pay then 800 so they
can be back to 5000.

Now if the caravans capital goes above 10K, the player
gets 10% of the extra capital for the daily payout. So if
your caravans makes 15K, you will get 500 because
15k - 10K = 5K and 10% of 5K is 500.

Once you receive the denars, your caravan will then be down
to 14500 and if they stay at that number or above 10K,
the next day you will again receive 10% of the total capital
minus 10K.

Also wage is paid before you receive your profits, so
sometimes wages will result in the player making 0 denars
because the caravan might have above 10K, but after paying
their troops, they fall below that threshold or exactly on 10K.

So to summarize, if a caravan has below 5K, you pay them.
Between 5K and 10K, they break even and nothing is paid to
you. Above 10K they pay you.
