How Do You Keep the Game Going When You Have a PLAYER MISSING?! π° GM 911 π #dnd #rpg

Hey guys, so I am in an interesting predicament with the D&D campaign I'm running so I figured I'd see what your thoughts are on it. One of my players is going on vacation for the next month and a half and won't be able to join in our weekly game sessions for that time. The party and me decided that we didn't want to do the boss fight without him and so now I need to pack in some more game time between now and when the player comes back so he can at least join us for that fight. My problem is I have know idea how to make enough interesting filler with what is actually going on.
Now the party is currently hunting an Ancient Blue Dragon in a very dangerous land known as the Bloodrock Wastes, where magic has created this terrifying and dangerous slot-canyon like terrain full of monsters and magical dangers, ie. flaming pillars, exploding rocks, mutated wildlife, not to mention they're within six miles of a blue dragon lair. On top of that one of the characters happens to be the Summer Knight for Titania and the Fey court and the Knight of the Winter Court, a 20th level warlock named Lucius Ebonwood, is trying to kill them before they get to the dragon. The party has no idea why but they really dislike him as I kind of based his character of Ramsay Snow/Bolton from Game of Thrones.
Currently my party has 6 characters that are all level 11-12, a fighter, a monk, a ranger, a paladin, a warlock, and a barbarian, plus two npc's of a level 9 dragon sorceress, and a level 12 bard that are accompanying them. My last session ended with the characters all floating, thanks to the fly spell, above a wide canyon filled with giant scorpions that were drawn to the corpses of the two purple worms the characters just killed. Now since the Winter Knight is a really smart individual and knows the capabilities of the players, he doesn't want them to have anytime to rest. I was hoping this would make things difficult for the players and they would get an understanding of how dangerous the Winter Knight is. The problem is that I don't just want to spam combat encounters because that would just get boring after a while, what are some other ways that the Winter Knight/I could mess with the party without just throwing hordes of monsters and minions against them?
