How to Close a Pie Crust

In this video, Mahalo cooking expert Stacey Hicks shows you how to close a pie.

Before the pie crust can be closed, the components of the pie must be assembled properly.  

1. Prepare the bottom crust of the pie and place it into a pie tin. Make sure the edges of the bottom crust are in line with the edges of the pie tin.

http://www.youtube.com/watch?v=Su-5i1-_7es3. Place the top crust evenly over the filling. Make sure the top crust is large enough to cover the filling and meet the edges of the bottom crust.

1. After placing the dough on top of the filling, fold the edges of the top crust under to meet the edges of the bottom crust.
http://www.youtube.com/watch?v=-Ao2bT5exy02. As the two pie crust edges meet, pinch the two pieces of dough together. Try to seal the edges as best as possible using a few drops of water as necessary to moisten the crusts so they will stick to one another.
3. Using the thumb and index finger of one hand, grab the pie crust at the location where they are sealed, keeping those fingers on the inner side of the seal. Loosely pinch the edges of both the top and bottom crusts while pressing in with a finger on the outer side of the seal. This technique forms a fluted edge to the pie for a decorative appearance.

1. Carefully cut holes in the top crust of the pie.  These can be simple slits or more intricate to create a decorative design. This step is essential because the vents allow steam to escape while baking.
http://www.youtube.com/watch?v=Su-5i1-_7es2. Additional spices like cinnamon and nutmeg can be sprinkled on top of the crust if desired.  Similarly, brushing the top crust with milk or an egg wash can create a glossy shine on the top of the pie in the finished product.
