A simple video on Parallel Quests #64 (Eternal Rivals), #55 (Power Berserkers) and #65 (The Return of the Giant Ape-Fest!) to demonstrate on how to beat Parallel Quests in Dragon Ball Xenoverse. Or at least most of them. You might have to use Taunt or something similar in some missions where you need to keep an NPC from taking damage.

Here's the breakdown:

Humans have a natural Ki regen. When we combine that with the Z-Soul: "Let me show you my evolved self" (the Z-Soul used by Golden Frieza), we essentially double the Ki regen rate. Note that in order to get this soul you need to have DLC 3. BUT, there are souls in vanilla version of the game that also give you Ki regen, such as "I am your brother."

As for the character stats, the only obvious thing is to have Strike Supers maxed out. As for the rest, I'd say you can do as you wish, but I do recommend having more or less boosted Stamina and Health if things go south. And in case you have the DLC 2 (which is required to get the Phantom Fist), I recommend stacking up on Stamina as well so you can manually dodge and/or fly away while your Ki recharges. Some extra Ki can also help out in case you miss your Hurricane, but it's completely up to you.

Next, the Phantom Fist (DLC 2 REQUIRED). When timed properly and assuming that you can spam it fast enough (and I mean FAST), you can stay like that as long as you keep spamming, even while not dodging any hits, Ki balls or skills. And as a bonus, every time you warp, you receive a bit of stamina as well! Alternatively, if you have Stamina to spare, you can play it safe and simply fly away while your Ki regenerates.

Lastly, the Blue Hurricane. Best when you catch more than one enemy in the area of the Hurricane. To get the most out of it, try timing the hit procs of the Hurricane like in the video. What happens is that as it hits one enemy, there's a slight delay before that enemy can hit again. While that "cooldown" is in effect, you can hit another enemy while the first one is still recovering, effectively allowing you two hit them separately with the same attack. You'll notice that the animation of the Blue Hurricane slows down and you can hear the hitsounds more frequently when you're doing it right. To sum it up, you can keep the enemies essentially locked in the Hurricane, have it last much longer than it should AND regenerate your Ki back, even enough for you to start another Hurricane immediately when the first one ends!

As for the Great Apes, all Apes have a "sweet spot" for the Hurricane. Usually located around and between their left shoulder and tail. When you hit it while the Ape is not stunned, you'll notice the Blue Hurricane slow down again. Stay in that spot to dish out the most damage.
