How to Make Classic Filipino Eggplant Omelette - Easy Recipe Tutorial

So why not attempt the local eggplant omelette? It's a simple, delicious dish that will certainly become a staple.
Ingredients:
• 2 large eggplants or as needed
• 3 eggs or as needed
• 1/2 cup of all-purpose flour
• 1/2 teaspoon of salt
• 1/4 teaspoon of black pepper
• 1/4 cup of cooking oil
Instructions:
1. Preheat oven to 350°F.
2. Roast the eggplants over an open flame or under a broiler until the skin is charred and the flesh is cooked. Set aside and let it cool.
3. Peel off the charred skin of the eggplants and flatten each one with a fork.
4. In a mixing bowl, beat the eggs and then add the flour, salt, and black pepper. Mix well until smooth.
5. Dip each eggplant slice into the egg mixture and coat both sides evenly.
6. Heat the cooking oil in a skillet over medium heat. Add the eggplant slices and cook until golden brown, about 2-3 minutes per side.
7. Remove the cooked eggplants from the skillet and place them on a plate lined with paper towels to remove excess oil.
8. Serve the Tortang Talong hot and enjoy!
Note: You can also add sautéed ground pork, diced onions, and minced garlic to the egg mixture for a more flavorful omelette.
