How to make Homestyle Congee
To make homestyle congee, a comforting and flavorful rice porridge, follow these steps:
Ingredients:
1 cup jasmine rice or long-grain rice
8 cups water or chicken broth
1-2 bone-in chicken thighs or breasts (optional)
1-inch piece of ginger, sliced
2 cloves of garlic, minced
Salt, to taste
Toppings (optional): sliced green onions, chopped cilantro, fried shallots, sliced boiled egg, shredded chicken, soy sauce, sesame oil, etc.
Instructions:
Rinse the rice thoroughly under cold water until the water runs clear. Drain and set aside.
In a large pot, bring the water or chicken broth to a boil over medium-high heat.
If using chicken, add the chicken pieces to the boiling liquid. This step adds flavour to the congee. Skim off any foam that forms on the surface.
Add the rinsed rice, ginger slices, and minced garlic to the pot. Stir well to combine.
Reduce the heat to low and partially cover the pot, allowing it to simmer gently. Stir occasionally to prevent the rice from sticking to the bottom.
Let the congee cook for about 1 to 1.5 hours, or until the rice has completely broken down and the texture becomes creamy. If it gets too thick, you can add more water or broth to achieve your desired consistency.
If you used chicken, remove the bones and shred the meat. Set aside.
Season the congee with salt to taste. Start with a small amount and adjust as needed.
Serve the congee hot in bowls. Add your desired toppings, such as sliced green onions, chopped cilantro, fried shallots, shredded chicken, soy sauce, sesame oil, or any other toppings of your choice.
