The amount of ginger you have will determine the amount of pickling solution you need.

It's not a precise science but here's what worked for me.

When I say one small jar, it contains 1 cup/205ml/8oz and when I say one medium jar, it contains double that, that is 2 cups/500ml/16oz.

For 7 small and 2 medium jars I used:
3.5 cups vinegar
2 cups water
2 cups sugar
2 tbsp of sale

For 4 small and 3 medium jars I used:
3 cups rice vinegar
2 cups water
1.5 cups sugar
2 tbsp of salt

For 2 small and 3 medium jars I used:
2.5 cups of rice vinegar
1.5 cups of water
2 cups of sugar
1 tbsp of salt
- this was almost short, so I'd go 3 cups rice vinegar or 2 cups water

Things I try to remember:
- before you start, make sure you have lots rice vinegar, better to have some left over than not enough
- have enough jars before you start and test the lids to make sure they work and are not prone to rusting
