To switch to your knife in Call of Duty: Black Ops 6, follow these steps:

Equip the Knife as a Secondary Weapon

In the Create a Class menu, select the knife as your secondary weapon in the loadout you plan to use.
Switch to the Knife In-Game

On PS5: Press Triangle to cycle to your secondary weapon, which will be the knife if you’ve equipped it.
On Xbox: Press Y to switch to your secondary weapon, bringing up the knife if it’s equipped.
Quick-Equip with the D-Pad

In some cases, pressing Left on the D-Pad will immediately switch to the knife if it’s an equipped secondary or tactical weapon (specific to certain modes or loadout setups).
