To switch your personal vehicle in GTA 5 Online, you can follow these steps:

Open the interaction menu and select Request Personal Vehicle to get your current default car.

Drive to the garage that has the car you want to change to and enter it with your current car.

Drive out of the garage with the new car and it will become your default car.
Open the interaction menu again and select Request Personal Vehicle to confirm the change.
