Natively this works pretty good! Xbox did a good thing here. The only issue is latency + Xcloud servers, which hopefully this will push Xbox to improve it

For sideloading, you can either use SideQuest or for me personally I like to sideload File Manager+ and then just download the apks direct onto my Quest.

I use NordVPN for this one, but any VPN should work fine. Just make sure to select a country that supports Xcloud.
