The $30 HDRetrovision PS2/PS3 Component Cable vs the $10 HDMI to PS2 Cable.

The biggest selling point being that HDMI works with HD TVs. I believe in the end, using a CRT is the best option as it'll yield zero input delay. But it seems the HDMI holds up well enough. Aside from the darkness which should be fixable with TV or OBS settings.
