0As soon as you untarget the sign (fully, the untarget animation must be over for ideal timing, as in this vid), just jab up left + A (can press A either 1 frame or 2 frames after the jab). You have multiple frames to do this. For unknown reasons, Link clips through the guard easier on his left side (may be the way the ground is?)
Beginners may want to pause, hold up left and mash A in unpause lag, but this has proven to be inconsistent by many. It does work, though, if you mash fast enough.
