I want to quickly summarize my experience by saying: "I liked it. I really, really liked it". I'll definitely get it.

To further elaborate:
-Obviously, a lot of Bloodborne vibes, which is a win in my book.
-The sheer length of the demo kinda blew me away. The run took nearly 3 hours.
At multiple time I thought to myself: "I'm sure the demo will be over after this." but no, it just kept going and going.
-The combat... feels like a mix of BB dash / roll, with some enemies moving at the speed of Dark Souls while other move at Sekiro speed.
Health also has the Rally system.
-The combat also seems to lean into Sekiro's focus on perfect-blocking/parrying.
I noticed some of the perfect blocks broke the enemies weapon.
-The sound design is exquisite.
-I liked Pinocchio's design. My heaven, he's gorgeous
-Something I noticed during the two 'automaton'? bosses, at the start of their 2nd phase some strange text appeared at the bottom of my screen.
I guess they are talking? but I couldn't make out what they are saying.
-The Donkey guy was pretty fun.
I also broke his big-ass kitchen knife.
-I found the little girl's mo... I mean the old lady's baby.
She gave an LP record with a beautiful song I've never heard before.
-I noticed the "Spring are reacting" twice.
Once after I enter the Hotel, and the second after I listened to the song "Free".. both of which I did by lying. Hmm.
-For whatever reason, I really love that Pinocchio twitches; like a clockwork toy. You can even hear his gear grinding when you're standing still.
-The character I'm going to call.. 'Constable Gadget' (the blue police officer that drops the stick) is this game's Genichiro. As in, 'if by this point you haven't figure out that blocking the intended mechanic, you are going to have a hard time moving forward'.
-And finally, I was going to say that it took me way too long to put together that "Gemini", the navi-like companion, was clearly "Jiminy Cricket", but I remember that it wasn't how I knew him.
To me he was "Pepe, el Grillo / Pepe Grillo".
Still, the cricket sound should have made me realize that.
