Recipe
Pizza Dough
Ingredients: This is for two 12 inch pizzas
1 1/3 Cup water (around 110F)
1 Tbsp White Sugar
1 tsp Kosher Salt
2 ¼ instant yeast (1 pack)
2 Tbsp olive oil
3 1/2 cups bread flour
Directions:
1. Mix water, sugar, and yeast together and let it sit in a warm space for approximately 5-10 minutes until it becomes foamy and bubbly
2. Add salt and olive oil into mixture. Mix and then add Flour into mixture.
3. Mix until it is no longer sticking to the side of the bowl. (~5 minutes)
4. Knead dough with bare hands with flour on hands and table.
5. When dough is no longer sticky and has good texture add a little bit of olive oil to bottom of mix bowl and place dough on top of it
6. Place plastic wrap or damp towel over bowl and let sit in a warm place for approximately 25-30 minutes and let the dough double in size
7. Take dough out and cut into halves
8. Shape dough into “rounds”. Use palms to round outside of dough ball and push up from the middle bottom of dough with fingers. Add flour as needed to prevent sticking.
9. Coat in flour and begin to stretch out with hands to approx. 12 inches.
Pizza Sauce
Ingredients:
Can of San Marzano Tomatoes 28oz
Basil (amount preference based)
Fresh chopped garlic (amount preference based) (~1Tbsp)
Directions:
1. Mix ingredients together and crush tomatoes with hands. Mix to desired consistency.
Deep Dish Pizza
Ingredients:
Pizza dough (12inch)
Pizza sauce
Deli pepperoni (25-30 slices)
Mozzarella Slices (10-12 slices)
Provolone Slices (4 slices)
Shredded Asiago Cheese
Italian Sausage (1lb)
Directions:
1. Coat dough in flour and begin to stretch out with hands to approx. 12 inches.
2. Place a touch of oil into bottom of 12 inch cast iron pan and spread evenly
3. Place dough in pan and have dough come up about ¼ inch up side
4. Place around 10 slices of Mozzarella around edge of pan with corners facing upward like diamonds and the last 2-3 slices on the bottom of pan
5. Place 4 slices of Provolone on bottom of pan
6. Place chunks of Italian Sausage around bottom of pan
7. Cover entire thing with Deli Pepperoni (25-30 slices)
8. Place around ¼ inch of tomato/pizza sauce on top
a. Optional: Can use pasta sauce (Olive oil and garlic). I prefer homemade.
9. Sprinkle shredded Asiago Cheese on top
10. Bake for 45-50 minutes at 425 F.
11. Use knife and run around inside of pan to separate crusty cheese from pan.
12. Cut slices and enjoy.
