This week Jonny makes spooky mummy eclairs just in time for Halloween.

Recipes for Pastry, Pastry Cream, and Ganache

Pastry:
1 cup water
1 stick unsalted butter
Heavy pinch of salt
2 teaspoons sugar
1 cup all-purpose flour
4 eggs

Cream Filling:
2 cups whole milk
1 tbsp vanilla extract
Pinch of salt
4 egg yolks
2/3 cup sugar
1/4 cup cornstarch
1 tablespoon cold unsalted butter

For Pastry:

Preheat oven to 450 F.

Combine water, sugar, milk, butter, and salt in medium saucepan over medium heat and bring to a boil. Remove from heat.

Add flour and stir. Place back on heat and stir for one minute to form a ball of dough.

Remove from heat and transfer dough to a stand mixer. Beat with a paddle attachment for two minutes.

Add eggs one at a time, beating in between additions.

Place mixture in piping bag fitted with large star tip.

Pipe out even ropes of pastry on a parchment lined baking sheet, about 3-4 inches long.

Tap down any dough that sticks up from eclair with a wet finger. Brush each eclair with egg wash (I use a full egg, beaten.)

You’ll need to bake the eclairs at 425 F for 10 minutes, then reduce the oven temperature to 375 F for the remainder of baking (25 minutes or until golden brown). Remove from oven and let cook.

Pastry Cream:

Add milk and vanilla extract to saucepan and place over medium heat. Bring to a boil. Remove from heat.

Whisk sugar, a pinch of salt, and egg yolks in a medium bowl until light and fluffy. Add cornstarch and whisk to combine.

Combine a dash of the warm milk mixture to the egg mixture and whisk. Stream in remaining egg mixture.

Transfer mixture back to the saucepan and place over medium heat. Stir until boiling. Remove from heat. Stir a minute longer. Transfer mixture to bowl.

Add butter to warm mixture and whisk to combine.

Place in refrigerator to cool and thicken.
