Making some strawberry cheesecake
This is only my 3rd time trying this but it's worked so far!! Forgive the mixer disaster I have heck!! That little thing is too powerful and its on/off switch is very sensitive. Need to make sure my workspace is more clear in the future.
*Graham Cracker Crumbs -- 2 & 1/4 cup
*Sugar - 3 tbsp for crust
*Sugar - 1 cup for filling
*Salted butter -- 1/2 cup, melted (for crust)
*Cream cheese, room temp gross -- 24oz
*Flour -- 3 tbsp
*Sour cream, room temp gross -- 3/4 cup
*Vanilla extract, the real stuff -- 1 & 1/2 tbsp
*3 big ole eggs

1. Preheat oven to 325°F. Grease a 9×13 pan.
2. Combine the graham crumbs, crust's 3tbsp of sugar and melted butter. Press the mixture into the bottom of the pan.
3. Bake the crust for 10 minutes, then set aside to cool that sucker.
4. Reduce the oven temp to 300°F.
5. In a huge honkin' bowl, blend the cream cheese, sugar & flour on low speed until combined and smooth. Use low speed to reduce the amount of air added to the batter, which can cause cracks. And try not to spray stuff everywhere like me. Scrape down the sides of the bowl while ya do it.
6. Add the sour cream and vanilla extract and keep mixing until it's combined.
7. Add the eggs a bit at a time, mixing slowly to combine. Keep scraping the sides too.
8. When it looks good, pour the batter into the pan with the crust and spread evenly.
9. Bake that cake for 30 minutes.
10. Turn off the oven and leave the cheesecake in the oven with the door closed for 20 minutes.
11. Crack the door of the oven, with the cheesecake inside, for 15 minutes. Cheesecake cracking minimized.
12. Put the cheesecake in the fridge to cool completely, 4+ hours.

-----Strawberry Topping-----
Strawberries, hulled -- 2 cups
Sugar -- 3/4 cup
cornstarch -- 2 tbsp
lemon juice -- 1 & 1/2 tbsp
pinch of salt
1. While cooking strawberries on low heat, 2. mix in sugar & corn starch. Cook until sugar melts.
2. Add lemon juice, and then salt.
3. Cook over low-medium heat for 10 minutes. It should be syrupy.
