So basically:

-karts aren't as bad as people think
-ultra shortcuts are broken but are only confined to TTs and didn't affect the game all that much when they were allowed online.
-items aren't unbalanced you just gotta get good lol

A few extra things from Kanehesnowman about karts:

Most people assume that the main reason karts are slower than bikes are due their lack of being able to wheelie, this is true but not for the reason you may think. Many believe that the mere ability of inside drift and chaining mini turbos into wheelies for turns is the main reason bikes are so fast in comparison to karts, this is an advantage yes, but it is not the main reason bikes are so overpowered. It is due to the fact that wheelies allow bikes to reach the max speed of 120 from boost panels and most importantly, tricks. Daisy Wild Wing goes 100.18 in a mt/smt, in a trick boost it goes 108.52 & from boost panels and mushrooms it goes 116.87, this doesn't seem bad compared to funky kong flame runner's stats of 100.81 mini turbo speed, 109.21 from a trick & 117.61 from boost panels and mushrooms. Until you realise that if your wheelie while in any of these boosts your speed is increased to 113.41 in a mini turbo and the max speed of 120 in any other boost, for trick boosts this is insane, a full 11.5kmh faster than what a kart can go is a major major disadvantage and the main reason karts lose so much time. Being able to exit boosts with full wheelie speed is also a huge factor in this. Flame runner does go 11.5kmh faster in a wheelie than daisy wild wing without boosts but online you have to avoid other players wheelie bumping you, items, and a lot of the time wheelieing is from chain wheelies which won't reach max wheelie speed. Also, another thing that barely anybody knows is that for whatever reason Nintendo decided that karts get less frames of boost from tricks, for stunt tricks karts get 5 less frames of boost compared to bikes whereas with flip trick karts get a whole 10 frames less. It is extremely frustrating that this exists and makes karts even worse for no real reason.

Karts can do some shortcuts a lot more easily than bike can & there are some shortcuts than only kart can perform, this is due to their ability to outward drift and perform SMTs. As for Regular Tracks there are very few examples of this, the main one that everybody knows is the Kart Moon Jump or KMJ for short, due to karts ability to drift outwards, momentum can be maintained from landing on slanted sticky road and can be channelled in such a way that can it can be used to cut off the following turn to save a ton of time. This tech has also been used recently to break the Custom Track GCN Rainbow Road.
As for using SMTs, there arent too many examples on Regular Tracks but there are some gap shortcuts where changing an smt and hop tricking to clear them is required. Whereas bike would need to spindrift wheelie hop trick in order to clear them, and in some cases even need to swap from flame runner to Mach bike for extra air from the trick (which is much more difficult and annoying). Some good examples of this are: Dark Matter Fortress Shroomless cut & Terra Ursae Shroomless Cut (let me know if you need videos).
The last example is a very specific one on the Custom Track: Melting Magma Melee, Due to karts outward drift the infamous shroomless shortcut is much easier and even faster! Kart can just do a left drift off the top of the up hill and detach off the sticky road and land on the track below, and since you are drifting you can charge a mini turbo to land with in order to put yourself back to full speed. Bike has to drift to the right then release its drift late to angle itself over the gap to make it so it cannot charge a mini turbo while doing this and has to accelerate back to full speed once landed in most cases.

Someone fact check me about if blue shells are more common in this game or not. I don't think they aren't but I couldn't find anything to back that claim so it's just a hunch.
