Minecraft's world generation was all random, but you can manipulate how they would generate generally, with World type setting when creating a world! There are few options, like superflat which makes... superflat world, but there are some world that's more like a default world. Single biome creates... well, single biome, but worlds like Amplified would be more interesting! The thing is back with 1.18 pre-release 1, but sadly... that came to a cost of sacrificing two features...
